Why doesnt the food get
browned in microwave oven?
Answer: In a conventional oven, browning is
caused by the high temperature breakdown of proteins
and carbohydrates and by a reaction between amino
acids and sugar. Due to the presence of hot air in
the oven cavity the surface begins to dry.
In a microwave oven the food surface temperature remains
relatively low in most cases, and therefore, charring
does not take place, unless a browner
is used. Moreover, the steam arising from the food
on coming in contact with the cool air, in the oven
cavity, condenser, leaves a moist food surface. Hence,
browning is not achieved. To overcome this, convection

What are the key components
of a microwave oven?
Answer: In addition to the digital controller
that runs the microwave, it contains
(1) a power relay that allows the controller to turn
on and off the microwave source,
(2) a power transformer that produces the high voltage
electricity needed by the magnetron,
(3) a power rectifier that converts the alternating
current from the transformer into the direct current
needed by the magnetron,
(4) a capacitor that smoothes out ripples in the direct
current leaving the rectifier,
(5) a magnetron that uses the high voltage direct
current to produce an intense beam of microwaves,
(6) a wave guide that transports the microwaves from
the magnetron to the cooking chamber,
(7) a cooking chamber in which the food absorbs the
microwaves and becomes hotter.
How Microwave Ovens Cook Food?
Answer: You often hear that microwave ovens
cook food "From the inside out." What does
that mean? Here's an explanation to help make sense
of microwave cooking.
Let's say you want to bake a cake in a conventional
oven. Normally you would bake a cake at 350 degrees
F or so, but let's say you accidentally set the oven
at 600 degrees instead of 350. What is going to happen
is that the outside of the cake will burn before the
inside even gets warm. In a conventional oven, the
heat has to migrate (by conduction) from the outside
of the food toward the middle You also have dry, hot
air on the outside of the food evaporating moisture.
So the outside can be crispy and brown (e.g. - bread
forms a crust) while the inside is moist.
In microwave cooking, the radio waves penetrate the
food and excite water and fat molecules pretty much
evenly throughout the food. There is no "heat
having to migrate toward the interior by conduction".
There is heat everywhere all at once because the molecules
are all excited together. There are limits of course.
Radio waves penetrate unevenly in thick pieces of
food (they don't make it all the way to the middle),
and there are also "hot spots" caused by
wave interference, but you get the idea. The whole
heating process is different because you are "exciting
atoms" rather than "conducting heat".
In a microwave oven, the air in the oven is at room
temperature, so there is no way to form a crust. That
is why foods like "Hot Pockets" come with
a little cardboard/foil sleeve. You put the food in
the sleeve and then microwave it. The sleeve reacts
to microwave energy by becoming very hot. This exterior
heat lets the crust become crispy as it would in a
conventional oven.

accumulate or leave any residual energy in the food.
What are the required safety
standards for microwave ovens?
Answer: An important requirement of the microwave
oven safety standard is leakage. Leakage from the
microwave oven usually comes through the seals around
the door. The standard requires that microwave leakage
not exceed 5-milli watt per square cm at any point
two inches from the oven surface. Therefore, to meet
this standard the leakage is not permitted to exceed
one milli watt per square cm, when the oven leaves
the factory. Moreover, the microwave power energy
varies inversely with the square of the distance.
This means that the intensity reduces with the distance.
Hence, a person standing twenty inches from an oven
that is leaking the maximum level he will be exposed
to roughly 1/100th of this level.
